For more than 35 years, Chef Thierry Bongrand has crafted a cuisine that gives pride of place to fresh, seasonal produce. While working with the utmost respect for his ingredients and their flavours, he continually seeks to add new foods and culinary techniques to his creative arsenal.
Our suppliers are selected with care and we place particular importance in their approach. We only work with people who are passionate about what they do, and who strive to maintain the know-how that guarantees French culinary excellence. We favour local produce, such as rice and bull beef from La Camargue, cured meat from Mont-Ventoux, and fruit and vegetables from the Provençal orchards of Le Luberon. We also source produce from specific regions for special foods, such as foie gras from Les Landes, duckling from Les Dombes and Bresse pullets.
